2, are you in a public session or private? Other players cheats can break production and it will not increase.
Also, if youre business gets raided, you'll need to set it up again, and maybe reset the technician who was assigned to accruing goods from that business.
Stop your technicians accruing goods then visit and close down and re-open your businesses one by one.
Then re-visit your nightclub and set your technicians to accrue goods once again.
EDIT - I don't recall if you lose stock or supplies for closing a business so that's for you to decide. Also, personally I closed and opened each business two or three times each while I was there.
I lost an absolute fortune with this bug and now my nightclub is my most profitable business.

Things you can do to test:
-play like 3 missions (production should increase as you play)
-try chilling in a 'closed friend' session, to make sure it is working correctly. (Maybe let the game run AFK for an hour, before you turn it off)
Worth noting:
Make sure your businesses themselves are also producing product. (That you've finished the setup missions)
