Well its a wiki, its updated and edited by random people not a single person, so it can take a long time for stuff to be updated.
The easiest way to find out the stats for a vehicle would be to go into the games handling files, but I think its safe to say the average player probably doesn't know how to do this.

They're not meaningless if you know how to read them. If I learned anything from working on vehicles in GTA IV even the cars actual model can mess with a vehicles performance even if the handling files themselves are untouched, to the point where moving a vehicles wheels without making changes to the handling files can leave them completely uncontrollable. Just reading them off won't tell you that.
