Keep looking backwards while ascending and flying out of Fort Zancudo until you're far away.
The airdefense doesn't fire as long as the base is in view.
Like others mentioned, stay low to the ground. I fly over the hangars staying low to the ground and cut left over the beach. others take the jet in the hangar and head straight south like in the video I listed. May not be the best video, but that method works
That'd be probably a hangar in the base itself.
Jump the ramp next to the freeway tunnel into the airbase, then drive for the middle jet and take off flying low over the mountains. simple
