You have the steam account, the steamid, the cd key - you should be able to 'prove' who are you with that info. They will likely ask for it, and should be able to help you - that includes changing the email to one you can access.

If they 'gave' you the option to change your accounts - then you'd have people posting stuff like 'omg all my rdr2 stuff is here, and my gtav stuff is there, but i really wanted to play this or that. How come they let us mess up our accounts and info.' It is crazy to think it is their fault in regards to account security or email use/longevity. Imagine they didn't let you buy the game til you could verify your account actually worked - and then we'd just get spammed with other threads of 'oh noes i couldn't buy it on sale because i forgot my email'. Fun stuff.

I would suggest going to this link, and putting in a support ticket with *chat if you ever run into this problem to get it done quickly.
