NOTE: After current update, you will also need to backup update2.rpf.
After updating to latest GTA V version, run GTA V, as soon as it goes full screen, hold ALT and keep tapping F4 until you get the option to quit, select to quit. This ensures it's activated for at least a couple of days in offline mode. Then delete update2.rpf, which the new update added, then copy, paste and overwrite with the backed up files from the previous version, put Steam in Offline Mode, and play the previous version in offline mode with Scripthook no probs until next Scripthook update. Trust me, this is working 100% for me.
Another thing you could try is right clicking your game in Steam, select properties, click on "UPDATES", and under "AUTOMATIC UPDATES", select "Only update this game when I launch it". Then under "BACKGROUND DOWNLOADS", select "Never allow background downloads", this should stop it from updating, I did notice that GTA V would not automatically update this time, but decided to go the other route to see if overwriting with the previous version of the files would work, and it did. Once the new version of Scripthook is released, I will again backup those files including the new Update2.rpf. I hope this is helpful to those who wish to play single player modded with scripthook after an update.
Also, my game has not requested to update at all in Steam Online Mode since copying the old files across.
