how to pilot the Velum plane ??
my second heist to the cayo perico need to steal a velum plane, when i fly up the plane keep crashing down

In very basic terms, up/down is reversed when flying, similar to swimming. If using a keyboard, numberpad 5 will bring the nose up (gain altitude), while numberpad 8 will point the nose down (causing a descent). Also be sure to raise the landing gear when it's not needed (G key), since that adds drag and will bring the plane lower. I would suggest taking some time to work on the Flight School tutorials, found at LSIA airport. You don't have to master all of them, but they will bring you better up to speed with planes and helis. However, back to the context of the heist, if there's another player who's comfortable flying, just let them handle the pilot duties.

Do the Flight School on GTA V 1st, then GTA Online's. Both flying tests are different in difficulty.

Smart idea. The later Flight School missions in GTA Online get quite challenging.

also, climbing too quickly (too steep angle) will stall you and make you drop. best way to get out of that is to angle into the direction of the drop (nose pointed in the direction you are falling) and gain some speed while carefully climbing/turning out of the drop again.
obviously this means stalling at low altitude is bad news.

bonus fact: first-person instruments inside aircraft work (the ones that are present, anyway).
this means you can use the attitude indicator (artificial horizon) to figure out your orientation if you find yourself flying in low visibility to avoid crashing into the ocean when flying out to recon the heist. might need to rebind some controls though, since you might need to move the mouse to see the gauge.
