As for the inner workings of the FiveM stuff. It simulates the single player game while connecting you to other people. They employ the same method Rockstar does when it connects you to other players in GTA:O (both use player-to-player connections). FiveM does not connect to Rockstar's servers nor social club servers when playing. You won't get banned by Rockstar for playing on them, same as Rockstar won't ban you for modding in vehicles, for example, in Single Player.
At the end of the day there is risk involved in anything. However, with the way FiveM does things (basically making a copy of GTA V for you to use) I doubt this would ever affect your GTA:O account.
Also, this is not the place to be posting ads for you server. People who would be interested in RP stuff are probably well aware of FiveM and if they weren't would eventually find it on their own. The vast majority of people here are interested in either GTA V or GTA:O. I guarantee there are better online forums to be posting discord invites to than GTA V steam.

Technically, these servers are not allowed, but yes - the rules aren't tightly enforced as let's say, modding directly online
They cant do ♥♥♥♥♥♥♥♥♥ to fivem considering how big the community is they would get bombarded with neg reviews
As for taking legal actions then taking down fiveM, you're fooling yourself if you think review bombing will stop R* from doing that. It's all a matter of how much fiveM is affecting their profits with GTAO. If they think fiveM hurt then more than it would hurt to take it down, they will do it. Also, times changed since that review bombing years ago. Steam will hide the review bombing and won't let it affect R*.
