game throws me into a propeller plane and i have to take down 3 attack helicopters. 100% impossible since i dont have any weaponry on the plane

When you see the Heli by the drop point land the plane in a safe place. Take a homing Rocket or Attack Buzzard and shot them down. Get back to plane and do the drop. Just repeat the process. This is what I do when I have the Heli's at the drop point. Works for me 100% of the time.

Wait, you could do that? I actually managed to fly through all checkpoints wtihout sustaining any major damage, so I decied it was fine mission, a bit nerve wrecking, but passable.

On the note of it being impossible, you just have to plan your route before getting to any checkpoint and you should be fine.

You can solo tonnes of stuff in this game if you think outside the box, when I see reds in an unarmed aircraft I land, kill them, and take off again. Sadly, companies like Rockstar forget that some of us are gamers in the first place because we don't socialise easily and have decided to turn massively multiplayer into massively co-op where everything requires a mic and a powerful tolerance for foul-mouthed children.

Yeah it works, I use it when delivering crates with Titan. You can also just leave session if you get plane mission and lose 3 crates.
