Crashing "every couple of hours" was already a thing to my mind from long time ago, I remember crashing a few time in the past "before all this" but not like in the past 3 month I was even telling my crew mate "I was not having crashes" (I made a break before all this began).
But has you can see I'm not totaly wrong.

For all the people that updated to win10 1903 that did fix the crash they were having with RDR2.
I played a couple of hours GTA5 and RDR2 yesterday without any crashes.

Current state of the game? Its just a rage-creator. Dosent matter if you play on or off.
Crashing(td) here and there. Crashing(td) 2 secs before the mission is completed.
Crashing(td) while riding to camp(onl and offl!!) (loosing all pelts on horse - this wont happen in SP), crashing(td) while accepting mission. Crash(td) while loading game. 5 times - sometimes it never stops crashing(td) while trying to restart the game. Camp not spawning even when i click 21345 times on it.
Today i have seen the first "invisible" glitcher on Pc lol..
It will get the same road as gtav.

I was happy on Xbox1X but VERRY, verry - verryF##KING disappointed by the pc version (exept the first level where everything was supercrisp in terms of everything was snow-white and had almost no texture. Game ♥♥♥♥♥♥ me hard as i wandered to valentine.. Everything was blurry. Hell, what a mess. A friend of mine was playing for only 15 mins and got headaches.
They ported this garbage 1:1 from console code and made it even worse for pc with decent hardware.
This game is FAR from finished. But what did you expect? As R* titles will enhance (maybe) over the time. I hope you guys go get some goldbars because i doubt that rockstar will support this game as long they did with gtaV when nobody is buying goldbars.

There was another issue with latin american spanish, don't know it was ever fixed or if all players simply changed to spanish from spain in windows.

also playing FIVEM is not the same as playing Grand Theft Auto V
the reason you don't get crashes is because you are not staying logged into social club
and if you read through the 'Yo can we fix the crashes??' thread you will find post by players who are able to play Story mode without crashes by launching in offline mode
