Ryzen 2700x and GTX 1080ti user here - I was crashing in every GTA ONLINE session after random times ranging from 20 mins to 2 hours on the NEWEST Nvidia Display drivers. I'm also up to date with all of the latest updates on Windows 10.
I removed all instances of Nvidia from Add and Remove Programs and reverted to Nvidia Driver 436.15 using a CLEAN INSTALLATION (this is an option you must select when installing the drivers) and have not had a single crash since. My crash issue was the game closing out suddenly to a Rockstar Error Prompt.
I also removed the Rockstar Launcher from my computer and downloaded it fresh and reinstalled directly from the Rockstar website.
In Event Viewer within Windows my crash was related to the GTA.exe Exception code: 0xc0000005
I believe the issue some people are having is with Nvidia's latest drivers. These changes seemed to help in my case. I hope it helps someone else.
