Open my documents - cut the rockstar games folder - paste it where you want it.
Now open an admin command prompt.
mklink /j "c:\users\<user>\my documents\rockstar games" "d:\wherever\rockstar games"
The example line above may/maynot be exact - just typed it out. You'll have to adjust it per dirs.
Probably easier for you to uninstall other crap off the drive and reinstall it elsewhere.
Why exactly do you want to move that directory?
You need to sort your ducks out and explain - with EXACT DIRECTORIES what you want.
I said my docs / rockstar games - that is NOT a gtav install folder - nor does it cause re-dl.
If you're trying to move GTAV INSTALL ITSELF - then you adjust the command / directories.

You must rename the origanal before it can create a shortcut. Usualy i just put a 1 in front of it to change it back at a later date when i'm removing it from ssd.

Mklink /j works just fine. Once you do it once you can do it in 5 seconds for any other game.
