Report a translation problem
It's not hard to know if you're "turning" left or right. The stunt jump camera is just a different angle, and slowed down. You can speed it up/return to normal speed, by scrolling upwards with the scroll-wheel on your mouse.
For example, all stunt jumps require you to be on all of your vehicles wheels by the time the stunt jump camera mode ends. Try doing the ones you're failing with a motorcycle. It should make it easier...it did in Grand Theft Auto IV, at least.
