This game is about driving the trucks not to sit there and let a computer control things.
However, if nothing has changed on last versions, if you have developer mode enabled, you can use the pause button (F1) together with fly camera button (zero on alpha-numeric side of keyboard). I just don't remember the correct order though, so your camera doesn't become locked. That's the only way I can imagine to enjoy the view without having to find a spot to stop.
Be warned though, if you use the fly camera together with pause, it stops loading the world far from your truck.
Edit: I know you said to prevent the camera from being locked. From what I got from the OP he just wants to look around, so the in-game camera mode allows that without switching modes.
You can park up at the side of the road temporarily to use the fly cam, that way you don't have to pause and run into the world load issue.
That can only move a few hundred feet away from your truck, and not fly high into the sky like the dev cam can. Much more limited range for if you want to see things far from the road, or a grand panorama.
Just putting in lane assist would be nice. It's not an auto pilot and it would prevent having to constantly press the left / right keys to stay going straight.
There's a mod to remove this limit. However, there are still two issues: first the moving speed on camera mode is limited and slower than fly camera, and second it has the same rendering limit of using fly camera with pause.
True. I was just trying to think on a parking-less solution.
If I could give an idea to OP, to keep the eyes on road and at the same time enjoy the view without stopping, I'd recommend driving in 3rd person mode, over the truck view (button 2 on alpha-numeric side). I did this yesterday just to enjoy the official Moon, and the new mountain near Salt Lake. 😉
