i deleted the item i needed for the quest and now i cant do the quest

Check your storage at your housing plot. It might have shown up in there.

Otherwise you'll need to open a support ticket and hope they can restore it.

Check your quest inventory tab. You can't delete quest items.

I've picked up several quest items after already completing the quests for them.

So at least some of those respawn, just check where you got it in the first place.
