I don't like the casino style upgrades.
Why can't I just go to town, to a blacksmith, and CHOOSE what affix I want to reroll? Why can't I throw gold at that affix until I get a roll I want? Why must it be so aggravating to wait for a orb to drop that will randomly take a stat and reroll it. If it removes a stat I want to keep and bricks the item, well GG go farm another one. Corrupted orbs randomly change everything and then lock the item forever. Lol WTF? I have like 200k gold and not the slightest idea wtf to use it on.

I love everything about this game and what it may one day become. The orb method of trying to craft gear is big time dumb.

Because if you could perfect craft what you want then there would be no point to trading?
Just get a base thats BiS for you build and go line by line until you hit the stats you want.

Eventually everyone would, for little effort, have "perfect" gear.

Crafting will for sure get reworked, probably multiple times, over the course of EA and release.

It's just a matter of waiting.

I don't want to be able to guarantee a roll, but i'd be fine if I could increase my odds for a specific roll I want.

There are plenty of ways to prevent that. Have it more deterministic but give the affixes a wider range could be one. Or have a currency that let's you pick one affix out of a random three. Or let items have a semi-random amount of 'crafting points' - like in Last Epoch - which limit the number of affixes you can attach to then, and their strength.
This almost total commitment to RNG isn't necessary. But it's GGG, it's what they do, have always done, and it won't go away.

Iol you can tell who played poe before and who hasn't until this. Just be thankful that the odds of vaal orbs bricking items aren't the same as they are in poe1. I haven't bricked or lost stats on a single item. The worst thing to happen so far is literally no change. Still some validity to the OP's complaint. Literally the only thing I like about about POE2 is the updated visuals and the fact that everything is new. I would give anything to play the POE2 with POE1 being the exact same behind the scenes (i.e. - crafting, drop rates, mob density, speed, skill gems, EVERYTHING).

Gold isn't meant to be a way to power up your character. Its meant to be a way to interact with vendors and a way to (potentially) deter bots from mass trading the various currency items by allowing players to do that through the 'Currency Exchange'.

The chaos orbs are horrible .... would be nice if we could choose which stat to get rid of .... that would be a great help

It's not just left up to your RNG though, it's distributed across the player base, in other words you're likely to find your "perfect" gear for sale eventually, and it will cost a lot but you won't have to roll for it.

Never played POE1 that much. But an ARPG without a reasonable crafting system feels kinda odd to me.
