How do you decide which class to play?

I played the shadow in poe1 but there's no assassin class in early access and I want to try something different anyway, I like melee combat and combos so would monk be good to go?

Warrior is a melee bruiser, Monk is an agile melee fighter and Sorc is a mage that blows things up with fancy elemental spells.

If you want gameplay of those three it's probably out there and if it's not it will be soon considering the game is planned to be playable today.

Start the game and select which character is appealing to you.

Either Stormweaver, Pathfinder, Witchhunter, Gemiling, Invoker, Bloodmage or Infernalist... so I've really narrowed it down.

Pick the one that resembles your playstyle.

I forget the class, but there's a class that is about traps that resembles an assassin somewhat.
