As for 2, I'd have to strip out the GamerServices stuff first, which is easier said than done. If Salt & Sanctuary gets the GOG treatment, we'll probably do the same for these two.
By the way - salt and sanctuary may be easier to free from steam. Actually, it works well with its binary right now (and only missed things are messages and corpses, which isnt that important), but character creation doesnt work without steam.
These two (CM and Dishwasher) should be harder, coz, according to tags, online steam-locked part here is more important and complex (whole online coop, which doesnt exist in S&S)
At least on macOS this was fixed in the 1.0.0.7 patch.
