If you find it too frustrating there is an easy mode called "simple" which let's you get all the way to the casino, only rewarding the last 5% of the game to people who got all the contracts. The other 95% is open in easy mode.
I have no idea how people complain about the difficulty in this game. While it can be challenging, other games such as Super Meat Boy are way harder. This game also lets you retry INSTANTLY when you die. You can even retry from the menu if you know that run doesn't stand a chance. I'm not even that great at platformers and this was the first game in my entire Steam library that I got 100% achievements on because the game was a lot of fun and I didn't mind dying at all.
Remember when every one HATED Resident Evil 4 because it had difficulty options and dynamic difficulty detectors?
If a game just let's you skip past everything without having done anything accomplishing it's just not rewarding anymore and feels boring. It's like if during a football match they removed the scoreboard and gave a free win to both teams when the match is over. Why were they even playing if both parts were gonna win? There's no fun or reward in that.

Just because there can be easier methods to enjoying a similar hobby, as you are implying with your deer analogy, it doesn't mean that the hobby should be brought down to an equal level and just simply give everyone an instant gratification solely because someone out there can't be bothered to improve or at least hone in their skills. Let me put it to you with another analogy: anyone and everyone can draw. So why doesn't a big animation studio just hire everyone to work for them, regardless if they understand animation or not? It's because you first need to have a level of skill and dedication that can meet their expectations, despite animating and drawing being at a basic core a simple hobby anyone can do.
The developers designed this game specifically to be difficult, so that players learn to pay attention to all the beautiful character animation that went into this game. If that's too much of a nuisance for you, you can simply not play it at all, but nothing is preventing you from getting better. You have an entire lifetime ahead of you to be able to enjoy this game all the way through.
If devs want to make a challenging game there's nothing wrong with that. If you don't like a game for whatever reason, (difficulty, graphics, gameplay, mechanics, etc.) that's okay. Just don't try and shame the devs to divert resources to something you want. It's up to the consumer to decide if a challenging game is worth purchasing or not.
