If you beat Eu/EW you will do fine in 2.
And lastly yes there are mods to make this even easier but at that point it may as well be point and click. I wouldn't recommend getting them.
Instead just enjoy the challenge and you will get better and eventually win. The game is designed to be that way.
However, I urge you to at least try the game without modding the difficulty first. The game's easier in some ways than EU was, it's mostly a matter of enemies being harder when you don't know what they do.
But if are still thinking of buying the game or not because of difficulty, then fear not... there is options in WotC expansion to make it easier in some aspects and if those are not enught then yes there is mods to make it even easier.
When i first started with xcom2 i did go right for ironman, but as this game is a "learn as you go" type. I would recomend to just play without mods and save scum unless you want to restart 50+ times as you learn the game in ironman.
Best would be to just save before each mission and if it goes bad then just restart.
