The Chosen stronghold missions that become available when you have carried out 3 covert ops to discover their locations are nice but go better with the kind of solid preparation that only comes with experience. You want experienced soldiers with good gear for either mission, however.
If you're playing ironman, you might not have much fun with a completely unknown and quite interesting mission like the Avenger Chosen defence ("quite interesting" as in unique and intimidating) so if you can attack the stronghold first then go for it. If you can't--well that's XCOM, baby. Good luck, Commander!
Superior scopes and superior perception are your friends. That is basically the very only thing I spent any kind of intel on early to midgame when checking the black market. High aim annihilates the chosen so badly, that you will just farm the abiliy points.
Mind shields work wonders. It doesnt matter, how strong the chosen get. They have no chance vs a high aim squad with appropriate weapons. So whatever you do, reasearching higher dmg weapons, mag and plasma as early as possible and also getting high aim, aim aim and even ten times more aim, should be your nr. one priority.
Chosen arent hard if you follow that strategy. No matter how powerful they get. A greandier with chain shot and good aim will singlehandedly take away one third of chosen health already. And thats just one of your soldiers.
Reaper with banish will make short work of any chosen almost solo kill them or even solo kill them.
Dunno what you spend your resources on, but its apparently not the really and truely relevant things. If you would do that, chosen wouldnt be a problem. I only do the hunt the chosen missions eary and midgame too, cause of the resistance order slots. But i kinda forget about the chosen cause you just melt them when they do appear.

High aim, high aim, high aim.
Easy strategy really.
They do gain knowledge automaticaly every month the same as you do. so that bits a race against time.
You can also buy from the black market items to reduce chosen info.
There is a card that reduces info by 33%.
There are also specific missions to prevent the sharing of info between the chosen.
There is a generaly at least 1 covert op to reduce info or counter activity.
i just did the avenger defence mission and the turrets (from building the base defence slot) were able to help alot.
The above poster gives all the ways to reduce it too. I never let them extract info unless I'm desperate.
I f.. up one mission and one of my soldiers was captured as she was still unconscius when I left the map (see my thread on flashbangs and frost bomb did not work).
I never use veterans for covert missions because I need them. :) Maybe I should to upgrade one of them.
Yes, I do play on ironman. Loading a game is boring...it takes out all the suspense Xcom is known for.
Banish? What? Dont flatter them, dead eye is more then enough for anything that can be flanked.
Edit: Assuming your reaper isnt a sad sack that doesnt get dead eye and tactical rigging.
