1920/1080=1,77777777... (16:9 correct value is near ~1,778)
2560/1440=1,77777777...
1920/1200=1,6 (8:5 / 16:10 correct value is exactly 1,6. Note that this is also the Golden Ratio.)
3440/1440=2,38888888... (21:9 correct value is near ~2,388 but it sounds too large so test something like ~2,370 first. This is because "21:9" monitor's true aspect ratio is not 21:9 but 64:27. It's the third power of 4:3.)
After you've set the correct aspect ratio, you need to set correct FOV so it won't appear "zoomed". The cvar for that is "g_fov" if I recall correctly. Correct FOV for the...
16:9 is approx. 115 degrees (or sligthly less) when resolution is 1920x1080.
16:10 is exactly 100 degrees for 1920x1200.
21:9 is probably some ridiculously high number for horizontal FOV and ridiculously small for vertical FOV and should be set separately if possible. But starting from 150 degress probably wouldn't be a bad idea. However that doesn't change the fact that your monitor is illsuited for gaming.
Note that I'm writing this here without actually checking if this works. I only own one game that uses idTech 5 game engine.
EDIT: Apparently g_fov is the real console command but it might/might not have been locked so it cannot/can be changed. I'd be interested to hear if you test it out and report if it works or not. And People with ridiculous 21:9 monitors probably want to check this out:

Somebody said that If your monitor is 120Hz, then setting R_swapinterval to -2 makes the game run 60FPS. On 60Hz monitor it's 30FPS. Setting it to -3 on 60Hz monitor makes the game run 20FPS. Setting it to -1 locks the game to your display's native freshrate.
EDIT: I made the math and unless I completely screwed up then correct horizontal FOV for the 3440x1440 in 21:9 is 155 degrees precise, and the vertical FOV is ~64,4 degrees. And that's just insane.
