I'm at the Dark Elf rn and she's the most unfun so far which says a lot cause the Water Witch was right before this.
I'm gonna beat this game on Normal without summons and the true ending just out of Spite and then I'm gonna make a Bad review cause the second half of this game has the worst designed Bosses since Bed of Chaos for me, okay maybe not Bed of Chaos but the Devs really loved running after Elden Beast for 50%+ of the fight it seems

The initial phase is always a little frustrating and seems impossible. After a number of fights, you can see the pattern and how to counter them. All the bosses are scripted and even some of the seemingly hardest boss do have stunning weakness due to the scripted AI behavior.
Imagine one day where they release a game with AI bosses that have the ability to learn from their human opponents. Holy macaroony ombatman! Hahaha. That day will come. It just a matter of how soon?
