Both games are simple as long as you go through the tutorial without skipping
If you don't like it being hard you can change it to Easy or even Storyteller. So you have options.
Normal (regular) players do need experience to get used to new mechanics.
Yeah for some reason it seemed quite hard at the beginning, but now that I'm in the third region I go up some bosses and kill them in the first two rounds without ever being in any danger. Granted I play on a lower difficulty, but the progression to difficulty relation seems to be a little unbalanced in the other direction now.
It literally is skill issue. I played the entire game on hard and had no issues whatsoever with any of the bosses. No idea how y'all are getting one-shotted in normal??? If you're engaging with the game's mechanics, then there shouldn't be any issue. If you're getting one-shotted in normal mode, then you're clearly doing something wrong.
alternate option > get better at the game (its more than possible on hard)
