Should I be doing a bunch of side-stuff BEFORE a deadline, or do I retain the extra days if I do the deadline early?

You get the extra days still if you do the quest early. In fact, like Persona, a lot of stuff only opens up after you've cleared the dungeon, so it's better to do it sooner.

Not much different either a day before dateline or few days before dateline. But if concern about weather (increase exp/ Aexp but no extra turn), you have to plan your days while talking to fortune teller to forecast weather. For me, during semi-blind playthrough I keep 5 days before dateline or depends on situation / the quest.

The sooner the better, as many new follower/Bonds are locked behind completing the deadline objective. Each chapter has 1-2. However dont be afraid to do spend a few days doing side dungeons to level up if you need it.
