Gang hideout a achievements not popping
I cleared out Fort Mercer in New Austin and Nosalida in Mexico with the fire bottles. The achievement didn’t pop. What gives?

The biggest reason I could think of for it to not trigger is the Fort Mercer challenge. Do you remember getting the panning camera shots with the text "Nosalida Complete" or "Fort Mercer Complete" for both?

You should have a "My Last" completion time in Journal > Challenges for both challenges. If either challenge has 00:00.00 as your last time, it could mean the game didn't actually count you completing the challenge the first time.

Also worth mentioning just to cover all bases; the story mission where you get inside Fort Mercer doesn't count as "completing" it. You have to visit it again, talk to the gunslinger outside the fort walls, clear the outlaws, get him inside and wait for him to finish talking.

I have 00:00:00 for all challenges. I redid Fort Mercer today and the achievement popped for that one but it still says 00:00:00 for it.🤔

Btw, to get all achievements do i need to do the individual objectives for each challenge?

From my understanding, the "My Last" time on a challenge should have a time regardless as long as it's done once, while the "My Best" time only updates if you completed at least one of the objectives, but since the achievement popped for you anyway it doesn't really matter.

As for the additional objectives on those challenges, they're completely optional. Each objective in a single run of a challenge ranks up the medal, going from None > Bronze > Silver > Gold, but challenge medals don't count for 100%, just completing each hideout at least once should be enough. The only time medals matter in terms of achievements is for the "Gold Medal" achievement which requires getting a Gold in a story mission that involves combat.

I got the achievements for the gang hideouts. One of them I came at from the other end, killed a ton of the guys, saved the dude tied up and then killed the rest. I think that is the reason why that one didn’t pop.

Any idea what all those hidden achievements are?

Many of the hidden achievements are just the "Complete '<mission name>'" type, the kind you get by just playing. You can actually check hidden achievement descriptions through your Steam library yourself by revealing spoiler-tagged achievements in the "Global Achievements" tab, though I understand if you're wanting to avoid potential spoilers.

If I counted correctly, 12 are hidden for the main game and 8 for Undead Nightmare.
  • 8 of 12 hidden main game achievements are for completing story missions.
  • 4 of 8 hidden Undead Nightmare achievements are for completing story missions.
Of the remaining 4 + 4 hidden achievements, only one is permanently missable and requires loading an early enough save or starting the whole game over. The other 7 should still be possible even after you've finished the story for their respective modes.

If possible spoilers aren't an issue, you can get more details and tips for each achievement at this Red Dead wiki[reddead.fandom.com]. Here are the hidden ones excluding the mission-specific ones.

-Main Game-
Spurred to Victory (Permanently missable!!)
Description: Complete 20 story missions without switching to a new horse at a hitching post.
NOTE: If you hitch another horse, use a deed, or the horse dies, the count resets and you must do 20 story missions starting from that point. If you're really far into the Mexico story missions at this point and you very recently changed your horse, there's a growing chance you missed it.

Dastardly
Description: Place a hogtied woman on the train tracks, and witness her death by train.

Manifest Destiny
Description: Kill the last buffalo in the Great Plains.

Heading South on a White Bronco
Description: Evade the US Marshals while riding the Hungarian Half-Bred horse.


-Undead Nightmare-
Spinning Plates
Description: Have every territory saved at the same time during the Undead Nightmare.

Six Years In The Making
Description: Find and kill a sasquatch.

Chupathingy
Description: Find and kill a chupacabra.

Fan Service
Description: Find and break a unicorn.
