Temporarily deleting your save isn't so much a solution as it is starting over for that DLC and hoping it doesn't happen again.
But that is indeed the only thing you can do. It's broken in the console version too and Capcom just never bothered to fix it. It happens to the Zombrex too in that DLC and a few people have had it happen with chips even. Try to do it all in one sitting when/if you make another attempt is my only suggestion. Reloading a save even broke my main story so I'm literally stuck in that DLC as well.
It's not linked to saves or doing it in one sitting. The game bugs out due to collectables. For some reason the counter always falls 4 short - DLC 4 is just the last one in the natural progression of things... if you started with DLC4, something else would bug out instead.
I do still suggest one sitting because as said, my story broke reloading and I'd have to ♥♥♥♥♥♥ the DLC anyway.
I guess that makes sense... With hindsight, I should've listed to my xbone owning friend and done the first DLC, then erased save and played the rest as normal to avoid issues.
