Dont start over, the monk you saved will increase the strength of all your potions much later in the game.
Also you will increase your potion number a lot as you play, so dont worry about that.
The second boss fight should be done without getting hit at all.
Very few attack patterns and a looong opening.
The only thing to be careful about are the minions he summons, but by now you should be able to dispatch them with ease.
One shoud be available in the place where you fought the first boss, behind two bookshelves. Roll into them to break them, then roll under the gate. There should be a chest behind it.
P.s.: I never realized that giving the monk a bottle takes one away from you!
P.p.s.: I beat the second boss exclusively with shots from the gauntlet from a distance. Maybe try that!
Really! You've got the same problem. Ha! That's great.
That said, the second boss is more or less meant to be beaten from a distance with the gauntlet, I feel.

You can get another empty bottle in a secret area at the 56:10 mark, but it's a little harder to get since you have to run through a high level area.

After Commander you can get 2 bottles in the vicinity of Burnt Watchtower.
Rogue starts with extra bottles compared to the other classes to make up for his low defense and HP. If you really want extra heals you could probably abuse it though, by ignoring agility and going Warrior/Cleric path. There's also the restat option which will let you redistribute your stats.
