I tend to outfit my seamoths depending on what I'm doing. For resource farming, I usually take a couple storage units, solar charger and maybe a pressure compensator.
For exploring, I'll take a couple pressure compensators, sonar, and the perimeter defense system. Note that the perimeter defense system is really only necessary if going into Reaper infested waters. Although it can be handy if I want to scare away other wildlife if they are around something I'm trying to get (i.e. fragments).
I find the torpedo system pretty useless, so I don't bother with it. And I'm not sure if the armor module currently works, since my Seamoth still gets damaged easily when I use it.
For me it's:
3x Pressure Compensator
1x Storage: One spare air tank; one spare battery; one spare Power Cell; one spare Beacon; loot overflow
Re: Sonar - Before the sonar was added I got into the habit of carrying a Beacon around and dropping it near the cave entrance to help me find my way out. Now we've got sonar but the beacon still works for me so why waste a Seamoth slot on sonar.

I think it's useful. I actually use it for finding caves (since you can see cave structures behind rock faces), and also for exploring deep biomes like the Grand Reef. Especially since things are so much darker with the new lighting in experimental.
Or, shorter: I always equip the EDS, and equip/carry 3 depth, and 3 storage - with the excess (since you only equip 4) in one storage compartment (or my inv, if I have 3 depth equipped).
Hull upgrade must be broken in experimental, because it doesn't seem to do anything. I take damage constantly running into fish.
OTOH, a lot of the fish roadkill end up being dinner.
My 'default' Seamoth has the defense system, a depth upgrade, and sonar, with the 4th slot with the torpedo launcher, which I might swap out for something else.
A second Seamoth, whichI made it and painted bright orange, just because, has 3 depth upgrades of its own, and I am undecided whether to put the defense system or sonar in slot 4 since I am planning on doing some hunting for blood oil next time I boot up Subnautica.
Speaking of roadkill, the Cyclops needs windshield wipers with fishing nets attached as Peepers aren't to bright in regards to avoid large moving objects... (either that or they just like the white paint job or the canopy a bit to much...)

With this setup, I can use the sonar and perimeter defence quite liberally and have unlimited range so long as I don't stray too deep. Damage to the Seamoth is taken care of by the Welder + Swim Charge Fins combination. I've never needed to dive below 300 m, but when the time comes, I'll probably switch out the solar charger for another pressure compensation module, and then the sonar as well if I need to go deeper.
The perimeter defence system is pretty much permanent for me. I just don't feel safe without it.
I didn't know that the Pressure compensator stacked!!! Mind blown.. Also I would think that the power efficiency module would be better especially if you're planning to do a dive below 300m because you can always fully recharge your seamoth when you return in the moonpool and carry a spare powercell for peace of mind and hopefully never have to use it.
