Oblivion Gates are pointless
If you don't want to get 100% Chameleon It seems like the gates are pointless to do and a waste of time because they use the same maps. I've only done 5 and I'm sick of them already and the Sigil Stone rewards are terrible! I have much better gear from chests, Deadric Shrines and the the Hatred Bow/Mace from one of the Gates. Am I missing something??

Gates are easy once you know the shortcuts on each version. You can make a lot of money from grabbing daedre hearts, daedorth teeth and bloodgrass to make potions with. And the chances of getting a magical item in a gate is extremely high, so it pays out even more.
what level are you on? Sigil Stones provide the best enchantments in the game AFTER player Level 17

You dont need the gates to get 100 chameleon at all

But yeah they're all copypasta. They felt like epic lord of the ring stuff at the time and aged poorly (5 loading screens per tower wtf)

Ignoring Chameleon, sigil stones still have fortify magicka, fortify willpower and Fire/Frost/Shock Shield at a higher enchantment than you can get in other methods.

For a Mage:
Fire/Frost/Shock Shield can be placed on clothing, Placing one of each at Transcendent level that is 75% shield + 25% resistance to Fire/Frost/Shock. Use a Chest Piece, A leg Piece and Shoes, For head you get the Bladeturn Hood and you've got 85% shield with no armor - that is 100% spell efficiency.

For a Melee, Fortify Willpower is Magicka Regen+Max Stamina, as you're more reliant on restoration, getting the full magicka bar back quicker is good.

For all builds, Fortify Magicka allows you to cast stronger buff spells or with longer duration.

For Shields, Rings and Amulets, there is just way better ones than the Sigil Stone enchantments give.

EDIT: should probably list the better ones
Shields : Spellbreaker or Escutcheon of Chorrol, these two shields are overpowered, notably Escutcheon of Chorrol is a levelled item, so only grab once level 25+

Rings : Mundane Ring, Ring of the Iron Fist, Khajiit Ring
Mundane Ring is anything but Mundane, easily the best ring in the game
Ring of the Iron First is reflect damage + hand to hand... it is an RNG only drop
Khajiit ring is chameleon and fortify speed

Amulets : Necromancer's Amulet, Necklace of Swords, Amulet of Axes
Necromancer's Amulet is the best mage item in the game but it is a levelled item (so only progress mage's guild to that point at 25+), also bugs might stop it spawning on completing the mage's guild quest line... there are other glitches to duplicate it first tho

Necklace of Swords/Amulet of Axes - Reflect Damage + Fortify Blade/Blunt (respectively) it is an RNG only drop.

The sigil stone is RNG - and usually the ones "worth getting" are at level like 17+. Otherwise it's just those named weapons, or money since all the Daedra as you level up will have enchanted non-sense.

Problem is you can get horrid RNG, like I closed around 20 in my last run here, and I ended up with at least 3 or 4 "frost damage or waterwalking" and multiple "fire damage or life detection" (for me literally useless ones) so I just stopped closing them.

I also don't actually "complete" them as much as wait for high enough acrobatics and just skip over the lava taking like no damage and then just rip through the main tower and clear each in like 5-10 minutes (if I gotta climb the terrain, it can take a bit longer, but I will find any way possible to skip the tunnels and outer towers).

Quatsch. E.g. Sigil Stone Feather gives you 125 per piece, there is no way to reach that with standard procedure.

Thats an odd statement, as you would require the sigil stones from the oblivion gates to enchant your gear to get a high magicka pool. Thus invalidating both your arguments.
The only point besides gameplay & roleplay are getting some of the best enchantments in the game and some unique weapons. The enchantments get better as you level up.

Oblivion is all about roleplay. Magicka pool is irrelevant if you are playing a character that does not use magic. If you just want to "win" you can get 100% chameleon almost instantly and complete the game without doing pretty much anything. But that is not really the point.
The Ebony Sword is better than any Sigil Enchant on a weapon same with Hatred Bow/Mace variant and I have items with better Enchants from chests or traders and I'm level 21. I have a 12% Shield Ring and 15% Robe and have 47 Armour with Shield, Ring of Namira, Grand luck Amulet (10), Ring of Stamina Fort Health and Stam +25. I mean can you even get Luck Sigils? They would be worth getting. I could get 20% shield on items but I already take literally no damage. Also I saw a post somewhere that said Fortify mage on items doesn't work no idea if that is true.

Custom Enchants with Grand levelled Soul Gems/azura's star will always be the best for weapons, due to Weakness to Magicka Stacking. I.E.

Soul Trap 1 second
Drain Health 100 points for 1 second
Fire damage 3 points for 1 second
Weakness to Fire 100 pts for 1 second
Weakness to Magicka 100 pts for 4 seconds
note: ordering is important

As the weakness to magicka ramps the drain health will get crazy on most creatures, alternatively the fire damage builds up quickly too... you can do Frost or Shock instead, just some creatures are immune to certain elements, Frost Atronach and Undead generally are immune to frost damage for example.

Sigil stones just can't touch the custom enchants.
