Failing that, you can quicksave before opening locks and do most of the game with one or two lock picks if you want.
Or the real solution to your current problem imo, use the Universal Achievement Unblocker mod from Nexus Mods. It's super easy to install, and it unblocks any new saves, so if you don't want to keep the mod you can literally install mod->load->save->uninstall mod->load the new save. Takes a few minutes and you're sorted.
If you use the mod though, do it sooner rather than later as it won't fix "missed" achievements retrospectively.
If it's too late to avoid missed achievements, you can restore them with AddAchievement in a console, each achievement has a number - get yourself in front of a website browser and look up the numbers. *Take care to only add achievements you have actually done the in-game stuff for.*
Obviously if you restore achievements with the console you will need to use the mod to unlock future achievements after you are done.
Is the save actually bricked?
Because disabled achievements and missed achievements can both be fixed VERY easily.

I also use the commands to create the items i need in order to make the equips i need to have fun.
I also had the idea of using the atronach, so i used commands to change the birthsign and test it with 100% spell absortion, saw the results and used commands again to revert back to mage.
I have no concerns with the loss of achievements, but if you do then check out the mod associated with it.
Another point - once you have everything fixed up, start progressing the main quest. If you do, there may be an in-game item you will really like... and no need for more console commands except the inevitable bugs.
That doesn't disable achievements. I've done that several times and still get achievements.
Given how bad the codebase of the Remaster is, still containing all the possible plotstoppers and glitches left when Bethesda finished patching Oblivion in 2008, the decision to disable achievments as soon as the console is used is pure evil from Bethesdas side.
