If i have Personality,Mercantile,Speechcraft maxed out at 100. do i gain any benefit from using gear that boosts these stats?

As I understand, no. There are only a few skills and attributes that benefit from being boosted past 100, I don't think these skills do

Personality does, but skills don't do ♥♥♥♥ after 100 (except athletics and acrobatics).

If you have about a 260+ personality (or about 240+ personality and a high infamy) enemy humanoid NPCs will be friendly with you.

Speechcraft and Personality yes, every 4 points of Personality continues to give +1 disposition, and Speechcraft allows you to persuade even further (while it "caps" at 100 with 255 Speechcraft you can effectively raise your disposition to 80+ beyond 100, this will allow you to become friendly with NPCs that are given a -100 disposition to you such as Draemora in Oblivion.)
