If it loading a specific save? Or saves? Can you start a new game ok?
Best thing you can do is open doors and let the knights die. I am not going to spoil anything, but don't worry about the knights.
When they are dead the game is stable again.
The loading crashes seem to happen (can't confirm it just yet) when the system runs out of ram. It loads and loads until the limit is reached and then it can't access the contents in memory because there is none left to reserve the info.
I have faced similar issues as yours in a cave, where 1 min of gameplay would always crash the game for no reason, i only solved it when i used an entirely different aproach when killing enemies.

The quest then played perfectly fine without any crashes.
Sadly this affects everyone as all players have the same game, it's a general issue and not unique to OP, users with a specific GPU or with inferior hardware, it's how the game is designed.
There is a pipeline to render scenes and data MUST be available at the right time, if the data isn't there (wrong timings, flushed, wrong order), you will crash.
Maybe your save game is bloated?
Got pretty stable game rn, but these keys are starting to worry me.
Would argue that the best performance fix would be to have ingredient box and a keychain
They are knights in a video game: their job is to basically die.
