The really good enchanted gear has debuffs of equal value to skills and/or attributes. I'm guessing someone's going to say "fOr tEh BaLaNcE!" but it's just weak.
However, Oblivion's self-enchanting mechanic was way better than Skyrim, where you could only put certain enchantments on certain items. Oblivion let you put fire damage on a ring, and drop it in a public place to let NPCs pick it up and die from it.
Morrowind was far better, though; footwear and handwear were two separate items. Too bad it looked terrible.
the main enchantments people look for are fortify health, fatigue, and magic with resistance to magic and shield, all of which are things you can get from transcendent sigil stones and enchant yourself to make your own set of armor that effectively nullifies enemy attacks, and then every other enchantment that you "think" you want on something will be something you get from a spell or item in your inventory or a potion.
for instance: there is zero need to be walking around with chameleon on all the time and luck fortified by 100 points, one can make a simple spell that lasts 10 seconds for that and be able to do literally everything they need in those ten seconds. - just an example because for some reason many people want 100% chameleon from enchantments when it's only ever needed in small amounts of time and can be done with a simple spell.
same with security fortification.
same with mercantile and speech.
almost every one of those enchantments you think you need on armors and such will not actually be required, even soul trap isn't needed on a weapon if you have the spell.
there's really only a few different types of enchantments you "need" in this game, everything else can be done with spells for limited amounts of time or potions.
Vanilla enchanting sucks though, Sigil stones are in limited supply, especially if you don't go out of your way to hunt down every single oblivion portal before completing the main storyline after you've leveled up (To I think 17? iirc?) to get the best stones.
Again, problem is it's also all single enchants.
I am a level 38 Fighter, I have always 85% shield on all the time, 20% Normal Weapon Resistance ontop of that, 600+ Hp, and nearly 100% spell resistance, (50% mundane ring, 15% Lord, One 20% Spell Resistance item)
But seriously the way items come enchanted in this game is very saddening, given the fact you can't custom make items with multiple enchantments, the ones you do find with multiple enchantments usually are for the strangest things.
I would absolutely love is my Arch Mage robes I got for completing the Mage Guild Storyline at least provided some benefits to being a spell caster, but no.. plain robes~ Enchant it yourself and have the power of one enchant in two slots of gear.
Spell making is fine in Oblivion but it's enchanting system left tons to be desired.
I thought baked in enchants couldn't be worse but holy cow.. level 30+ and 11 poison resistance
