So if you make a Restore Fatigue potion with a Radish and some other lightweight material it will weigh 0.1 regardless of ingredients used AFTER you make one. The inverse, as is your case, is also true.
Luckily you're not capped on Alchemy just yet. If your skill grows and your Restore Fatigue potions reach a new magnitude or duration value then you can make a new potion with a new weight.
It's important to be mindful when crafting potions for when magnitudes or durations change if you're working in materials that don't result in 0.1 weight potions - especially when there are combinations that can achieve that 0.1 weight (or 0.0 if using garlic!)
Edit: for now you're stuck with Restore Fatigues weighing an abysmal 5 weight until you can up your skill or get better tools to have differing magnitudes/durations.
it makes much more sense now, such a weird bug ! I would be more cautious from now on, thanks a lot for taking the time to write this extensive answer.

Edit : I just tried to take a less powerful retort and the weight of my potions is back to normal, It seems that I'm gonna stick with less powerful potions until I obtain better stuff !
