Is there a difference between dagger, shortsword and longsword?
Like do they use different attributes or is the bigger sword always better?

Dagger and shortsword use Agility, longsword uses Strength.
what shaken said, but also daggers when doing stealth greatly outperform swords. you can get an x8 multiplier with a dagger, swords get i think x3 only, great swords maybe get less? i cant remember, it might be the same in oblivion as any other sword though.

long swords and big swords also run off strength stat, where as short sword and dagger are agility stat... so you get more output if you are focusing specific stats with different weapons too.

I felt like a dork for never realizing this until earlier. I was only leveling strength / endurance and my Argonian assassin was landing crappy crits with an ebony dagger lol. I'm also at the level now where melee is quickly becoming very dangerous for me.
Daggers and Short Swords now use agility for damage, larger weapons use strength. They will still have lower base value, but a high agility and low strength character may be able to outperform larger weapons. Due to their attack speed you may also be able to deal more DPS than just raw damage,

Daggers get a higher stealth multiplier at x8. Cleaned through half of the late game with an enchanted daedric dagger + invisibility. One shot most things.

Daggers + Shortswords scale with Agility while Longswords scale with Strength I believe.

Also attack speed.

Maybe I'm wrong, but I've actually found smaller swords/daggers to be better if they're enchanted. Enchant effects are the same on every weapon type. Smaller weapons swing faster and so apply the effects faster. So daggers do significantly more damage than greatswords in my experience.

All in all though, the best swords are the uniques like Goldbrand, Umbra, Dawnbreaker, etc. As much as I love daedric daggers, there isn't really many unique daggers that are that impressive.

I think a greatsword sneak attack only did 1x when I tried it last but I can't remember if I had Journeyman Sneak on that character or not. It seems like a Remaster change made to make daggers more appealing to certain builds coupled on with the changes made to other weapon types, which is only unfortunate because I've always kind of liked the idea of rogues with hammers/maces dealing a devastating surprise bonk.
