Load an earlier save and cure it before you transform.
There is two ways to remove Vampirism, there is a Quest in Skingrad or you can use Deepscorn Hollow to remove the condition.
Step 1. Go inside.
Step 2. Wait/Sleep
Step 3. Go outside after dusk and before dawn.

You can also just steal the soul gems you need from the arcane university.

I Remember going at level 1 to go get bit to become a Vampire, Supre fun way to play.

I remember I would feed on the blood of the homeless to get me by to remove the daylight burn

Feed daily and you wont have to worry about sun damage.

You don't make hard saves?
Open the console and type "player.additem 977e4 1" This will disable achievements for the rest of the playthough unless you're willing to mod the game. But at least you won't have to restart.

Also, always keep a few rolling manual saves to avoid problems like this.
OP, if grand soul gems are your biggest concern, steal 2 from the witch’s basement and get the last 3 from the arcane university. You can do all of that in under 5 minutes at level 1.

Save more often, use cure disease potions the moment the indicator says you have contracted something, and use disease resistant armor, spells, and potions when fighting vampires. then intentionally become a vampire on your 4th or 5th play through.

What ? I have like 60 saves excluding the autosaves.

Autosaves overwrite the current save. Quicksaves do this, too.
Being vampire sucks, so many restrictions

Cheat? Use the console commands to give yourself the Cure Vampirism potion:

Player.AddItem 977E4 1

to put it into your inventory and then just drink as normal.

Using the console will stop you getting steam achievements, however. You can mod them back on again but it depends on how much hassle you want to go through.
