Joining the Mage or the Fighter guild is probably the easiest way to check if your achievements are fine.
this mod should help fix this shortsighted ♥♥♥♥♥♥♥♥♥♥♥ either way. i have mods and occationally console command (just freecam for screenshots) and still got achievements afterwards. does not work retroactive, but another achievement unlocker might possibly, but i use this one so i'll stick to this one in recommendations, additionally this mod has an article attached that says how to manually unlock achievements you already missed, if need be.
install manually, NOT via vortex. vortex currently breaks things
mine of locked probably because i open Discord Overlay with shift+~
i saw the console command with 2 entries which was "~~~a~" and "~~"
which means that anything you write and press enter to get rid of it lock the achievements
What's so annoying about this is Skyrim's original release did not disable achievements and rare ones were still rare. So all this is to placate a vocal minority of control freaks. It's dumb.

Also with this, once the mod is installed you can console command yourself the achievements you're missing and then play normal from there. If you're unsure what you are missing, typically it's just your rank in the factions menu for whichever faction you are in.
