A tip for picking locks
Regardless of lock difficulty (except "very easy" cuz its always slow), if you try out one of the pins a few times youll notice they sometimes fall faster and sometimes slower but they also rise faster or slower. By testing it out a few times you can catch on to a slow rise and you can never fail to lock in a slow rising pin. You just click once its at the top, which is really easy if its a slow one since it stays at the top for quite a while.
Actually 100% effective, just dont make an oopsie and misjudge if it was a slow one or not.

I used to not have enough picks but now I dont know what to do with them all :/

Yes, this was the way lockpicking worked in original Oblivion. You don't just go for it the first time. You have to get the "feel" for each tumbler. Push up, watch it fall, push up, watch it fall, then you go for it to get the timing right. Once you figure it out, it is easy to disarm all locks without the need for much skill in security.

Get Skeleton Key from Nocturnal shrine when you are level 10!

Yeah this is what tripped me up too until I re-read the tutorial. I had forgotten that the speed means you need to wait and see how fast it goes.
save before to use hook if you lose a lot charge your save
