It’s difficult to find information on this, but from what I can gather, it was originally a jungle and then changed via Bethesda’s signature lazy writing.
I can go outside in real life and everything is vibrant and colorful.

It was not a jungle in Arena, it wasn't described as a jungle in Daggerfall either. The only game where it was mentioned to have vast rainforests was Morrowind. And honestly, even if they were going for Roman aesthetics, jungles wouldn't make sense, because Italy doesn't ♥♥♥♥♥♥♥ have jungles. If anything, the current version is closer to the climate that Romans would've inhabited.

Kind of weird that everyone complaining about how "brown" the game looks keeps posting screenshots of the parts of the game that were always yellow or brown and/or just before sunset.
Also, news flash: Dirt, mud, wood, and many types of stone and brick are typically some shade of brown. Posting images of those things and complaining about them being brown makes you look pretty dumb.
Second news flash: Sunlight, particularly when the sun hangs low in the sky, tends to cast a yellowish hue over everything, which can make certain colors more muted and brownish in appearance. If you've never witnessed this phenomenon, try going outside.
I think the main thing people are foggily remembering about the game (when they're even making a good-faith argument) isn't so much how "lush and green" it was but how overblown the bloom was and how over-saturated the colors looked a lot of the time. Sure there was some artistic direction to it, but I think the overall look of that game was just as much due to the technology available at the time. To me, this remaster looks every bit as "lush" and "alive" as the original, even moreso in a lot of cases, but in more realistic ways, and I LOVE that.
