I really don't understand why the game looks like this.
I don't think this is quite a Demon's Souls remake situation, primarily because the original Oblivion was always hideous anyway. This certainly doesn't seem to respect original's art direction, though. It would be excusable if it were trying to replicate what Cyrodiil was originally meant to look like - a Roman Mediterranean jungle. It's not doing that either, though.

Everything just looks brown. And dead.

Modern remakes typically do not respect the source material, or its fans. They're designed with politics in mind, not players.

Uh huh.
All but one of these screenshots is either indoors, in a city, in Hell World, or of a dead landscape.

The one screenshot showing any greenery does not look anywhere near as lush as the original game.

Oh excuse me I didn't know half the game was off limits. 😂

You can travel to the corners of the map and anywhere that Cyro borders another region the landscape will change. Approach Skyrim get snowy mountains. Head south get swamp. Etc.

I thought it was clear from my mentioning of jungles that I was referencing the more verdant areas of Cyrodiil, as well as the general color grading of the game.
Games from the 360-era were notoriously drab. This version is definitely more vibrant than the original was.

The original Oblivion was an exception for the era,

Like, this is eye searing and doesn't look good, but it certainly isn't drab.
I'm sure someone will make a reshade with brighter colors

That can only aid so much. Make nature more vibrant and then you end up throwing off the color grading of everything else. Usually it ends up giving everyone irradiated skin tones.

The trees also look like they’ve dropped most of their leaves.
Cyrodiil wasn't originally supposed to be a Roman Jungle.

You don't own the game, what are you talking about.
OG Oblivion was basically technicolor but a lot of that was just because it is washed out in comparison. If you got upgraded textures on OG OB you saw the same sort of thing, where everything got a little dirtier. The colors are still there, it's the lack of light interplay and texture that you are seeing in the OG, like any art. No detail? Cartoon.Bright. Cartoon Nertwork for ten years. Lots of detail? Dark. Gritty limited netflix series.
Fix it with a mod, done.
I see this complaint quite a bit and I think what it actually is is the fact that the game now has realistic lighting and fog, and everything looks bland and dreary when it's foggy, wait until you're on the side of a mountain on a clear day with the sun shining and the bright blue sky.
Go throw popcorn at a movie screen you homeschooled broccoli headed shut-in
