Hate to tell you this, but Todd's not the only company to have done this, and it's been done to death by other companies as well. Maybe not in UE5, but certainly the cheap remakes/reskins. How many GOTY editions do many of these companies have? EA has the remakes of ME1/2/3 that changed nothing but packaged them all together.
Todd is just following the trend, which has been going on for years.
I would love to see Morrowind, but you'd need to do more work than they did here for Oblivion. The Morrowind combat system *sucks* and there's almost no voice acting.
