If you were to get paid 50 bucks for a months work, you'd consider that cruel and unfair.
Yet you complain about how paying 50 dollars for something that took many years to make is a bad value proposition.
Yeah, Bethesda has never remade any of their games because the effort involved is too similar to making the next entry. It's unreasonable to expect a $30 price tag.
OP is just looking for an excuse to angry. He can play via gamepass instead or wait another year for the discount. It's already been 19 years, what's one more?
Yes they are asking a tidy sum, but the game is nearly twenty. It isn't like they remastered a game from the past few years. This remaster probably required a substantial investment, and it is for a game that genuinely deserved/needed a remaster.
It isn't like they tweaked something. That was already built for tweaking. This game was very outdated, and the older something is. The more work is actually required. I'd have liked it to be cheaper, but I still purchased the game.
Number one reason is this version supports the controller. I'm not a big fan of playing with a keyboard and mouse, and so even though I own the original I couldn't get into that. Not that the graphics were helping matters much either.
I'll easily get a few hundred hours out of this. So the math still works out to be in my favor. If you want to get mad about something. Let it be the lack of real competition. Nobody in the market is trying to replicate the formula.
Everyone is so hell bent on live services. That a lot of those games are free to play. It's really frustrating as we need more games like this, and there is a strong demand and money here, but developers insist upon going after all of the money.
So they keep saying, but I dont buy it. Just another in the endlessly long list of excuses from lying developers as to why you get less and pay more.

They literally remade the entire game on a brand new engine. That’s the definition of building from scratch.

The industry isn't firing off staff left, right, and center, because things are going incredibly well for publishers. When prices go up by ten to twenty percent. People need to get paid ten to twenty percent more. When publishers bet on the wrong thing it just means they've got to charge more for the right thing.
