Anyone able to get above 3840x1080?
Nope I have the same issue too

For me, it's the same, I have a resolution of 5120x1440 but it's impossible to adapt it to my maximum resolution. You have to wait for a patch or a mod, no choice...

I think that's a bug. Try setting it to borderless. I edited my Oblivion.ini file to set it to 7680x2160. Save it and made it read-only. After that I was able to see a difference in the game. I think it's running at native res, but only shows 1080p in that menu.
Oblivion.ini is here: E:\SteamLibrary\steamapps\common\Oblivion Remastered\OblivionRemastered\Content\Dev\ObvData

Yip same issue here
For a workaround until there is a fix, you can just use 'borderless' and it will automatically adapt to the desktop resolution which for me is 5120x1440.

But for some reason that results in these weird green artifacts only about 1px high at the very top of my screen in dark areas and it's distracting (and my background is orange so it's not that).
If you run in borderless it will run in your monitors native res, 3840x1080 is a UI bug.

I'm getting those too, but only in dark areas as well. I get little spikes of green/red on the edge of my screen when exploring ruins. Not just you!
Hey I just wanted to respond here with the official response from Bethesda.

The Elder Scrolls IV: Oblivion Remastered supports 21:9 and 32:9 ultrawide resolutions.

Different resolutions can be selected in Windowed mode
The display’s native resolution will be used when in Borderless or Fullscreen modes.
