They removed some of the most annoying nonsense from the leveling system that forced you to not level, or choose only skills during character creation that you did not plan to use, or have a tally sheet for your skills to remember how often you used them in the curent level.
Most of the bugs that were fixed for the original by modders, but not by Bethesda, are still in the game. We need to wait and see if some brave soul will port all bug fixes over to Remastered.
Do I have fun, after installing a few mods that help me roll my eyes less? Yes, I do.
Just do not forget that it is an old game and its core was not touched much. Do not expect a better Skyrim.
It might be worth to check the forums for bug reports specific to your PC loadout. These seem to be quite some.
