Is there a way to get back achievements after opening the console commands? Besides mods? Just wondering if deleting everything will solve the problem or is just bonked for good.

Open a clean save, usually one before the save where you opened the console, also restart the client because sometimes the console taint persists between save/reload.

Opening the console by itself doesn't disable achievements. It's when you use a valid command where the switch is then flipped. Like another mentioned, the only way to enable achievements again is going back to before you entered a command in.

Download the mod Baka Achievement Enabler from nexus mods. Then you can play the game or you can take it one step further and manually unlock all the achievements you need with console commands. Just google manually unlock achievements for Oblivion Remastered.
