Spam crafted health pots for a heal over time while smacking him with a weapon with silence?
There's a ring with 100% resist to paralyse/disease/poison would protect from your paralysing attack reflecting back.
If your block is high, shield bash is maybe worth a try.
Stack more thorns and don't attack? You have 30% reflect damage, is that from a necklace with a +25 to blade/blunt? There's also a ring (iron fist) that has the same reflect damage, along with a hood from a mage guild quest that gives another 17% reflect damage.
Can't say I've fought him in the remaster, but literally just beat him in og with ooo mod (if anything, he's harder) and all I had to do was lay a few 3x poisons in him and he was done for. Kinda underwhelming (although OOO gives you another fun dude to fight first so I imagine that was supposed to be the major challenge anyways). Probably same deal in remaster. I know he wears a mundane ring in vanilla og game, so that's 50 resist to magic and some amount of spell reflect itself. Magi. Might not be the the play without huge custom weakness spells to overcome.

For the other replies. Unfortunately I'm playing a sword + shield traditional combat only run, so I cant summon anything decent (or anything at all without scrolls), I'm also not using alchemy for this run, so I dont have any poisons strong enough to even make a dent.
I do have most of the best enchanted rings/necklaces , so I can for example switch them round to get less magic res but much more reflect damage; however this doesnt seem to help. ( I dont remember him being this hard in the OG game lol)
I cant use sneak bonus damage cheesing as I havent done any stealth work for this playthrough, so I dont get any bonus damage for sneak attacks. (could swear that was different in OG too, although could be confusing it with Skyrim...)
I know I 'could' beat him, but I'd have to load a save from before even entering his Paradise and then mess around for ages tweaking things, which tbh I cant be bothered to do. Might just load the save and do shivering isles first lol
Otherwise custom spells can nuke him or nearly anyone else rather easily as well.
For instance combine
100% weakness to magic X seconds (2 or more)
100% weakness to an element for X seconds (2 or more)
Drain 100 health for X seconds (2 or more)
Y damage of whatever element you made him weak to for X seconds (2 or more)
This spell should be reducing his health by 100 points then doing quadruple the element damage because of the weaknesses and be insanely cheap compared to just straight up doing the damage with a single spell effect instantly.
Poisons also work wonders against him as he is a caster.
There are numerous ingredients you can combine to get the silence effect & effects that will damage health & drain magic (possibly elemental damage too if you are good enough with alchemy).
As a mage if he cannot cast he cannot heal and his offenses go to crap.
So I cant nuke him with custom spells or make heavy hitting poisons, I also dont get massive bonus damage multipliers for stealth attacks as I dont use daggers and havent levelled sneak at all. So does that mean I cant beat him without sacrificing my RP and grinding skills I dont use?
What about bows? If you really went strictly sword and board with no other means of offense then yeah, you're vulnerable to running into someone who isn't easily killed by melee weapons possibly. If you had Marksman as a backup you could pull out a bow and pepper him with arrows until he runs out of mana and then health. Damage reflect only happens on melee physical damage. Mundane arrows wouldn't care about his magic resist, absorb, or spell reflection either. It would be his shield rating and healing vs your arrows. If you bought some paralyze potions to coat the arrows with, that might eventually work too. At least slow down his spell casting.
I was going to suggest summons. Even if you're not a magic using character, there are still plenty of scrolls and enchanted items with summons. Summon creatures scale with the character just like any other monster, so in the case of the OP, a level 28 summon will be very powerful
You might also try bringing friends, if you're Grand Master in any guilds or you've completed Knights of the Nine or Battlehorn Castle
There is a way to boost combat damage via restoration.
Melee damage is calculated based on how much your max endurance is vs how much you had when you made the attack.
Meaning if your endurance is 2x what your max would have been when you make the attack your damage is then doubled.
There is actually a funny old meme build a streamer made 17 years ago.
He ate a bunch of stuff that damaged his max endurance down to 10 then used restoration magic & enchantments to boost it to over 200.
That way his first attack was doing 20x normal damage and every attack after that was only slightly less powerful.
