you need to build the appropriate building (e.g. a crystal chamber for nagas) and then recruit the creature from the throne room.

the don´t sleep, they get bored and than they punish minions.
They will be angry if you dont pay them and wont work for you as long youre not pay them etc.

the most questions will be answered in game

From the FAQ:

In fact, we did not try to recreate Dungeon Keeper 2. While Dungeons 2 is of course a dungeon management game and is inspired by the Dungeon Keeper series, it is very much its own game. We have the firm belief that Dungeon Keeper 2 is a classic for a reason and it would be near impossible to recreate the exact splendour that it created back in 1999. So instead, we asked ourselves the question, what core features and new impulses a dungeon management game would need to have to enthral players today – and we hope that we succeeded in creating a game that delivers as much fun to you as it was fun developing.

War for the Overworld is much closer to Dungeon Keeper.

Check out that game if you are not already aware of it.

Of the two factions all the creatures require for sustenance and boredom relief are:
Brewery and Arena for the orcish.
Admiration Chamber and Torture Chamber for the demonic.

Yes, there are elite versions of each class at tier 3 for both factions.

That's an interesting point.
While Kalypso as they say, "we did not try to recreate Dungeon Keeper 2", Subterranean Games did.
However in terms of gameplay, I've found that Kalypso have managed to pull it off better than they did. If there had ever been a DK3, this feels closer to the ideal than what WFTO has achieved. The only two factors I feel WTFO have done right is the ambience and of course rehiring Mr Rider for the narrator.
when i go to heaven one of the many things im gonna want is to make Kalypso and Subterranean games combine these two games
