Arbalest ≠ Arbalester
A user of an arbalest is an arbalester. The current name seems to imply that you're actually hiring an arbalest and that it is the arbalest itself that is levelling up.
Don't get me wrong, arbalests definitely deserve some loving, but if I'm going to be hiring one I'd rather not get a person attached to it, so maybe in your spare time it might be possible to change the title (alternatively make all arbalests into floating sentient weapons, though that just raises questions about how they're having heart attacks) into Arbalester to avoid some initial confusion.

I thought it was supposed to be Arbalist.

Anyway, in some themes certain soldiers are named after the weapons they wield.. such as hammers or rifles. Not that this is necessarily proper but I've definitely seen it before.

I looked it up a little bit more and Arbalist, Arbalester and Arbelist are all adequate names describing a person using an arbalest.
As for your other point: You're correct, but no other hero in DD use that naming convention.

Both Arbalest and Arbalist are correct, even though the former is a less common word for a crossbowman.
