The ones that have you collect things basically cause you to lose three inventory spaces' worth of loot, which is unacceptable.
I never noticed the gold amount being any higher than other quests to compensate, but if it is, I'll have to reconsider.
Sometimes I do choose such a quest though if I don't have other quests of the right length and level, it's the only quest for an area I want to unlock the next boss for, or if the rewards have a trinket I want.

Yes, I can imagine picking it if the situation warrants it. But it's sad that this particular quest type comes with an extra drawback and no compensation for it.
I don't see why every quest has to be made equal. In any case, one of the potential advantages of the gathering quests (and the "use item on thingy" quests as well), is that all of the relevant curios can be bunched up early on. Sometimes you get lucky and you don't have to risk much to get the reward.
What's almost as bad are the ones you start with 3 inventory items that you can't get rid of them until you find the right curio. I always seem to find the quest objects only when I'm almost done exploring the map, and have to leave the quest with an empty inventory slot or two, having had to throw away some treasure earlier.
