As you progress through the game, getting new chars up and running quickly gets much easier.

This is normal. Each area has a gimmick or theme to it you need to learn. You learn this either through dying or running away.
Each death is a learning experience. There’s no time limit in the base game. You can never soft lock yourself out. Learning each time you have a setback is the most important thing.
Random stuff: Vestal and Occultist are the best healers. Ranged characters tend to be most favorable. You only need one tank, but don't actually need one. Speed is one of the most important stats. Antiquarians are the best way to make gold. Stress will kill you, if you don't deal with it.

Whether or not you play with mods is up to you. I personally loved my first experience with this game without any mods. The limited variety in heroes actually leads to more creative strategies from my experience... and even when I do play with mods nowadays like... four new mod characters is the max in my book (With and without DLC). And that's pushing it. Anymore and they start stepping on each other's toes and filling each other's niches. The strategy becomes more so "Pick this character instead" rather than "There's some utility in this old character you looked over. Get creative and try 'em out ^^ "
